“De rijsttafel”

De rijsttafel is a Dutch word that literally translates to the rice table, it is Ellie’s favourite food memory from growing up in the Netherlands.

Both Ellie’s grandparents are originally from Indonesia and after a long colonial era, her grandparents moved to the Netherlands. Her opa has passed away, but her oma is still alive and kicking. And turning 102 years old in two months.

Dutch-Indonesian rijsttafel. Rijst means rice and tafel means table; a table that has it all - slow cooked spiced meats, tofu and tempeh, crunchy pickled vegetables, smothered eggs, fried rice cakes, sambal that makes you cry and a big pile of steaming rice, to bring it all together.

Dutch Indonesian food just exists in the Netherlands, it tells a story of people moving to the other side of the world, bringing food memories with them. When bringing food memories over and translating them to a place where not every exact ingredient is readily available (re: Indonesia being a tropical country and the Netherlands very much not) - “traditional” recipes change, they adapt. De rijsttafel is a tribute to the food that my oma made, the endless rijsttafels that she would have on birthdays, anniversary parties and also on random Sundays.
